Migas Tacos | The Quarantine Cook

INGREDIENTS

-4 Eggs

-A handful of corn tortilla chips

-1/3 cup salsa

-1/3 cup cheese

-1 Jalapeno

-1/2 onion

-2 Tbsp butter 

-Tortillas for serving

-Salsa verde for finishing 

METHOD

-Whisk eggs into bowl, then break up a handful of tortilla chips into beaten eggs

-Stir in 1/3 cup of salsa into egg chip mixture

-Finely chop onion and jalapeno

-Sautee in pan on med-high w/ butter until veggies soften and brown slightly

-Reduce heat to low and add 1 tbsp butter

-Pour in egg mixture and stir continuously until scrambled ( eggs should be gooey, they should not break apart into individual clumps, if that happens you have over scrambled.)

-Fold in cheese and remove pan from heat

-Spoon eggs into warm tortillas 

-Top with salsa verde
